Chicken Sausage and Chilli Pasta

Shopping List

  • 3 tsp olive oil
  • 1 pack Richmond Chicken Sausages
  • 3 garlic cloves
  • 1 red chilli, thinly sliced
  • 150g cherry tomatoes
  • 400g short pasta e.g penne
  • 150g spinach (optional)
  • 75g grated parmesan
Step 1Cook the Richmond Chicken Sausages according to packet instructions.
Step 2Boil a large pan of salted water and heat a large frying pan on a medium heat and cook the pasta according to the instructions.
Step 3Add the olive oil to the frying pan and cook the garlic on a low to medium heat.
Step 4Add the cherry tomatoes, the chilli and a couple of spoons of water and let them simmer until the tomatoes begin to soften and form a sauce.
Step 5Once the chicken sausages are browned, cut them into bite-sized chunks.
Step 6Drain the pasta and mix both the pasta, spinach and chicken sausages chunks into the tomatoes sauce.
Step 7Serve and top with grated parmesan.
