Ingredients
For the batter:
- 150g plain flour
- 4 medium eggs — lightly beaten
- 150ml whole milk
- A pinch of salt
For the filling:
- 8 Richmond Thick Irish Recipe sausages
- A healthy drizzle of olive oil
Method
- To prepare the batter, place the flour in a mixing bowl and make a small well in the centre using your hands or a spoon; pour in the beaten eggs and a dash of the milk. Slowly stir the mixture, folding the flour into the centre of the bowl. Gradually add the remaining milk until your batter is smooth and creamy. Set aside for half an hour to settle while you prepare the sausages.
- Preheat your oven to 200°C, 400°F, Gas Mark 6.
- Pour a healthy drizzle of olive oil into an oven tray, add the sausages and place in the oven. Allow to cook until sausages are golden brown on all sides, this should take 10-15 minutes.
- Remove the tray from the oven and pour the silky batter over the sausages. Return to the oven and cook until the batter has risen and turned golden.
Tip
Serve with peas and steaming hot onion gravy for the perfect, warming dish.
