Sausage and Stilton Potato Cakes

Ingredients
- 6 large potatoes
- 8-10 sausages
- 1 large onion
- Garlic
- Mushrooms
- Mixed herbs
- Milk or butter
- 1 egg
- Flour
- Salt & pepper
- Wedge of Stilton
Method
- Boil the potatoes with the skins still on.
- Grill or fry the sausages and then chop into small pieces.
- Fry the garlic with a little olive oil; add the mushrooms and onion.
- Mash the potatoes; add the chopped-up sausages along with the garlic, onion, mushroom mix and Stilton. Add salt, pepper, mixed herbs and a whisked egg. Fold through the mash. Add a little butter or milk to ensure the mixture is smooth. Mix again, folding through and ensuring the mixture is not lumpy.
- Once the mixture is cool, make into cakes.
- Put some flour into a bowl and cover the cakes in flour.
- Using a hot pan, place 4 cakes into the pan; cook for 2-3 minutes each side until crisp and brown.
- Repeat with another 4 cakes and then serve two cakes per person, with side salad and dressing.
