Sausage Casserole

Ingredients

  • A healthy drizzle of olive oil
  • 2 medium onions — diced
  • 1 clove garlic — chopped
  • 8 Richmond Thick Irish Recipe sausages
  • 1 220g tin of baked beans
  • 250ml of vegetable stock (made up with a stock cube)
  • 1 400g tin of chopped tomatoes
  • 1 tbsp Worcestershire sauce
  • A pinch of mixed herbs
  • A sprinkle of salt and pepper to season

Method

  1. Gently heat the olive oil in a deep pan, add the onions and garlic, and fry until golden brown and softened.
  2. Carefully add the sausages and fry for a few minutes, until brown.
  3. Add the remaining ingredients to the pan, bring to the boil and allow to simmer for approximately 20 minutes.
  4. Season with a pinch of salt and pepper.

Tip

Serve with some creamy mashed potato and savoy cabbage for the perfect casserole meal.
