Ingredients
- A healthy drizzle of olive oil
- 2 medium onions — diced
- 1 clove garlic — chopped
- 8 Richmond Thick Irish Recipe sausages
- 1 220g tin of baked beans
- 250ml of vegetable stock (made up with a stock cube)
- 1 400g tin of chopped tomatoes
- 1 tbsp Worcestershire sauce
- A pinch of mixed herbs
- A sprinkle of salt and pepper to season
Method
- Gently heat the olive oil in a deep pan, add the onions and garlic, and fry until golden brown and softened.
- Carefully add the sausages and fry for a few minutes, until brown.
- Add the remaining ingredients to the pan, bring to the boil and allow to simmer for approximately 20 minutes.
- Season with a pinch of salt and pepper.
Tip
Serve with some creamy mashed potato and savoy cabbage for the perfect casserole meal.
